- 🍚 2 cups soaked rice
Vegetables
- 🍄 2 eringi mushrooms (80g)
- 🧅 2 green onions
Liquids
- 💧 Water as needed
Seasonings
- 🍶 1 tbsp sake
- 🧂 2 tbsp soy sauce
- 🧈 20g salted butter
- 1/2 tsp Japanese dashi powder
Finishing
- 🧈 20g salted butter
الخطوات
Separate the eringi mushroom caps and stems. Slice the caps thinly and cut the stems into 1.5cm pieces, scoring a crosshatch pattern on the cut surfaces. Chop the green onions finely.
In a rice cooker, add the soaked rice, seasonings (sake, soy sauce, butter, dashi), and water up to the 2-cup line. Mix well and flatten the rice. Spread the eringi mushrooms evenly on top and cook as usual.
Once cooked, add the chopped green onions and gently mix. Serve in bowls and top with additional butter.
