Vegetables
- 🎃 350g pumpkin, cut into chunks
- 🥕 30g small carrot, julienned
- 🍄 50g enoki mushrooms
Fish
- 🐟 100g salmon fillet
Seasoning
- 🧂 Pinch of salt and pepper
- As needed, all-purpose flour
- As needed, salad oil
Sauce
- 1/2 tsp chicken stock granules
- 1 1/2 tbsp vinegar
- 🍬 1 tbsp sugar
- 1/2 tsp soy sauce
- 🧂 1/3 tsp salt
- 💧 2/3 cup water
Thickener
- 1/2 tbsp potato starch
- 💧 1 tbsp water
الخطوات
Cut the pumpkin into chunks and julienne the carrot. Prepare the enoki mushrooms by trimming the ends.
Season the salmon fillet with salt and pepper, then coat it lightly with flour.
Heat salad oil in a pan and fry the salmon until golden brown. Remove and set aside.
In the same pan, lightly fry the pumpkin chunks until tender. Remove and set aside.
Prepare the sauce by combining chicken stock, vinegar, sugar, soy sauce, salt, and water in a pot. Bring to a boil.
Mix potato starch with water to create a slurry. Gradually add it to the boiling sauce to thicken.
Combine the fried salmon, pumpkin, carrot, and enoki mushrooms with the sauce. Simmer for 2–3 minutes.
Serve hot and enjoy your pumpkin and salmon sweet vinegar dish.
