Cut bell peppers in half lengthwise, remove stems and seeds, and slice into 7–8mm strips. Mince the garlic.

Boil water in a pot, cook glass noodles according to package instructions, drain, and set aside.

Heat half the sesame oil in a frying pan over medium heat, add bell peppers, and stir-fry for 2–3 minutes until softened. Remove and set aside. In the same pan, add the remaining sesame oil and garlic, cook over low heat until fragrant, then add ground pork and stir-fry over medium heat until browned. Add sliced red chili and stir-fry for another minute.

Add glass noodles to the pan, mix briefly, then add the seasoning mixture (sake, mirin, soy sauce, and water). Cover and simmer over low heat for 3–4 minutes.

Add the cooked bell peppers back to the pan and stir-fry until well combined.
