INGREDIENTS
Dry Ingredients
- 1 1/4 cups all-purpose flour
- 3/4 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
Wet Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup white sugar
- 1/4 cup brown sugar

- 2 teaspoons vanilla extract
Topping
- 1 tablespoon white sugar
- 1/2 teaspoon ground cinnamon
STEPS
Preheat the oven to 350°F (175°C). Line an 8x8-inch square pan with parchment paper, ensuring overhang on all sides.
Whisk together the flour, cream of tartar, baking soda, salt, 1/4 teaspoon cinnamon, and nutmeg in a bowl.
In a separate bowl, beat together the butter, 1/2 cup white sugar, and brown sugar with an electric mixer until light and fluffy.
Add banana and vanilla extract to the butter-sugar mixture and beat on low speed until well combined.
Gradually mix the flour mixture into the wet mixture until the dough just comes together. Press the dough firmly and evenly into the prepared pan using lightly floured hands.
Mix the 1 tablespoon of white sugar and 1/2 teaspoon ground cinnamon for the topping. Sprinkle evenly over the dough.
Bake in the preheated oven for approximately 25 minutes, or until the center feels set when lightly touched.
Cool the bars in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into 16 bars.
