INGREDIENTS
Base Layer
- 🍪 2 (16 1/2-ounce) packages refrigerated break-and-bake chocolate chip cookie dough
Caramel Layer
- 🥛 2 (14-ounce) cans sweetened condensed milk
- 🟫 1/2 cup packed light brown sugar
- 🧴 1/2 cup light corn syrup
- 🧂 1 teaspoon table salt
- 🧈 10 tablespoons unsalted butter
- 1 teaspoon vanilla extract
Chocolate Topping
- 🍫 2 (4-ounce) bars semisweet chocolate
- 1/4 cup heavy whipping cream
- 🧈 2 tablespoons unsalted butter
STEPS
Preheat oven to 350°F (180°C) and prepare a 13 x 9-inch baking pan with baking spray. Line with parchment paper, leaving overhang.
Press cookie dough evenly into the bottom of the pan using plastic wrap.
Bake until golden brown, 25-30 minutes, then cool on a wire rack.
For the caramel layer: combine condensed milk, brown sugar, corn syrup, salt, and 1 cup butter in a saucepan. Cook and whisk until bubbling, about 10 minutes.
Continue cooking until caramel thickens and reaches 235°F, about 10 minutes. Stir in vanilla and pour over the cookie layer, spreading evenly. Refrigerate for 1 hour.
For the chocolate topping: melt chocolate, cream, and 2 tablespoons butter in a heatproof bowl over simmering water. Stir until smooth, 2-3 minutes.
Spread melted chocolate over caramel layer and refrigerate until set, about 1 hour.
Use parchment overhang to lift bars from the pan. Cut into pieces and serve or store in an airtight container.
