INGREDIENTS
Main
- 🍑 4 ½ cups pitted, chopped plums
- 💧 ½ cup water
- 🧂 7 ½ cups white sugar
- 🧈 ½ teaspoon butter (Optional)
- 1 (1.75 ounce) package powdered fruit pectin
STEPS
Gather the ingredients.
Inspect 6 half-pint jars for cracks and immerse in simmering water until jam is ready.
Combine plums and water in a large pot over medium-high heat; bring to a boil. Reduce heat to medium-low, cover, and simmer for 5 minutes.
Stir in sugar, then add butter to reduce foaming if needed.
Increase the heat to high, stirring constantly, until a full, rolling boil is achieved. Quickly stir in pectin and return to a rolling boil. Boil, stirring constantly, for 1 minute.
Pack jam into hot, sterilized jars, leaving 1/8 inch at the top. Remove air bubbles, clean rims, and top with lids.
Place jars in a boiling water bath, ensuring they are submerged by at least 1 inch of water. Process for 10 minutes.
Remove jars and let rest undisturbed for 12 to 24 hours. Check seals by pressing the lid center to see it does not move.
