INGREDIENTS
Base Cake
- 🥚 3 large eggs
- 🧈 1/3 cup butter
- 1 teaspoon vanilla extract
- 🌾 2 cups all-purpose flour
- 🧂 2/3 cup white sugar
- 🧂 2 teaspoons baking powder
- 🧂 1/2 teaspoon salt
- 🍊 1 whole orange (seedless, cut into eighths)
Icing
- 🧂 3/4 cup confectioner's sugar
- 🍊 1 tablespoon orange juice
STEPS
Gather all ingredients.
Preheat the oven to 350°F (180°C). Coat an 8x4-inch loaf pan with nonstick spray and line with parchment paper.
Wash the orange and blot it dry with paper towels. Cut it into eighths, removing any seeds.
Combine the orange pieces, eggs, sugar, melted butter, and vanilla extract in a blender. Blend until smooth (about 30 seconds).
Add flour, baking powder, and salt. Blend until combined and the batter is smooth. Do not overmix.
Pour the batter into the prepared pan. Bake for about 45 minutes or until a toothpick comes out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Whisk together confectioner's sugar and orange juice to make the icing. Drizzle over the cooled cake.
