INGREDIENTS
Potato Chips
- 🥔 1 russet potato
- 2 teaspoons vegetable oil
- 🧂 Salt to taste
- Ground black pepper to taste
Beer-Battered Fish
- ¾ cup all-purpose flour
- 2 tablespoons cornstarch
- 🧂 ½ teaspoon salt
- ½ teaspoon garlic powder
- ¼ teaspoon baking soda
- ¼ teaspoon baking powder
- ¾ cup malt beer
- 🐟 4 (3-ounce) cod fillets
STEPS
Peel the potato and cut into 12 wedges. Soak wedges in a medium bowl filled with 3 cups of water for 15 minutes, then drain and soak in fresh water for another 15 minutes.
Mix together flour, cornstarch, salt, garlic powder, baking soda, and baking powder. Add ½ cup malt beer and stir to form batter. Add more beer 1 tablespoon at a time if the batter is too thick.
Place cod fillets on a lined baking sheet with a drip rack. Spoon half of the batter over the fillets. Freeze for 35 minutes, then flip and coat the other side with batter. Return to freezer for another 35 minutes.
Preheat air fryer to 400°F (200°C) for 8 minutes.
Cook frozen fish fillets in the preheated air fryer for 15 minutes, flipping at the halfway point.
Drain water from potato wedges and pat dry with a paper towel. Toss in a bowl with oil, salt, and pepper. Cook in the preheated air fryer for 15 minutes.
