INGREDIENTS
Sauce
- ¼ cup Dijon mustard
- 2 tablespoons brown sugar
- 1 teaspoon dried parsley flakes
- ½ teaspoon dried thyme
- 🧂 ¼ teaspoon salt
- ¼ teaspoon ground black pepper
Protein
- 1 ¼ pounds pork tenderloin
Vegetables
- 🥔 ¾ pound small potatoes, halved
- 1 (12 ounce) package fresh green beans, trimmed
Other
- 1 tablespoon olive oil
- 🧂 Salt and ground black pepper to taste
STEPS
Preheat the air fryer to 400°F (200°C) based on manufacturer instructions.
Whisk together mustard, brown sugar, parsley flakes, thyme, salt, and ground black pepper in a large bowl. Roll the pork tenderloin in the mixture until evenly coated.
In a separate bowl, combine potatoes, green beans, and olive oil. Season them with salt and pepper and mix until evenly combined.
Place the pork tenderloin into the air fryer basket and cook for 20 minutes, ensuring the internal temperature reads at least 145°F (63°C). Let the pork rest for 10 minutes after removing it.
While the pork is resting, add green beans and potatoes into the air fryer basket. Cook for 10 minutes, shaking the basket halfway through the cooking.
Slice the pork tenderloin and serve with the potatoes and green beans.
