INGREDIENTS
Marinade
- 2 tablespoons Thai sweet chili sauce
- 🧂 1 tablespoon soy sauce
- 1 tablespoon Sriracha
- 🧄 1 teaspoon granulated garlic
- 1 tablespoon fresh ginger
- 🥜 1/3 cup creamy peanut butter
- 🧂 1/4 teaspoon salt
Main
- 4 boneless, skinless chicken thighs
- Cooking spray, as needed
Side
- 2 cups cooked rice, or as needed
Garnish
- 🌿 Chopped cilantro, as desired
- 🥬 Sliced scallions, as desired
- 🥒 Julienned cucumbers, as desired
- 🥕 Julienned carrots, as desired

STEPS
Combine Thai sweet chili sauce, soy sauce, Sriracha, granulated garlic, minced ginger, peanut butter, and salt in a resealable plastic bag. Mash ingredients until well mixed.
Add chicken thighs to the bag and ensure they are coated thoroughly in the marinade. Refrigerate for 30 minutes to 24 hours.
Preheat air fryer to 350°F (180°C) according to manufacturer’s recommendations.
Spray air fryer basket with cooking spray.
Remove chicken from marinade and let excess drip off. Place chicken in air fryer in single layer and air fry for 20–22 minutes, flipping halfway through. Ensure chicken reaches 165°F (74°C) using an instant-read thermometer.
Mix unused marinade with 1/2 cup of water, and microwave on high power until boiling and thickened, about 1 minute.
Serve chicken over cooked rice alongside the sauce and garnish with cilantro, scallions, cucumber, carrots, and peanuts.
