- 🧅 1/3 cup onion
- 🥕 1/3 cup carrot
- 🧂 1 teaspoon kosher salt, divided
- 🥚 2 large eggs, lightly beaten
- 🍤 1 pound raw shrimp
- 🍚 2 ounces brown rice
- 3/4 cup green peas
- 1 tablespoon soy sauce
- 1 teaspoon rice vinegar
- 1/4 teaspoon black pepper
- 1 tablespoon toasted sesame seeds (optional)
- 1/4 cup Sriracha mayonnaise
STEPS
Preheat the air fryer to 400°F (200°C) for 5 minutes.
Coat the air fryer basket with oil, add onion, carrot, and 1/2 teaspoon kosher salt. Stir to combine and cook for 5 minutes.
Add beaten eggs to the basket and cook until partially set, about 3 minutes.

Drizzle the cooked fried rice with Sriracha mayonnaise and sprinkle with scallions before serving.
