INGREDIENTS
Meat
- 1 pound ground lamb
- 1 pound ground beef
Vegetables & Herbs
- 🧅 ½ cup finely diced yellow onion
- 🧄 4 cloves garlic, crushed
- 1 tablespoon minced fresh rosemary
- 2 teaspoons dried oregano
Spices & Seasoning
- 🧂 2 teaspoons kosher salt, or to taste
- 1 teaspoon fresh ground black pepper
- 1 teaspoon cumin
- 1 teaspoon paprika
- ⅛ teaspoon ground cinnamon
- ⅛ teaspoon cayenne pepper
Miscellaneous
- 2 tablespoons dry bread crumbs
- 1 tablespoon olive oil
STEPS
Preheat oven to 350°F (175°C). Oil a 9x13-inch baking dish and line with parchment paper, oiled side up.
Mix ground lamb, beef, onion, garlic, rosemary, oregano, salt, pepper, cumin, paprika, cinnamon, cayenne pepper, and bread crumbs. Pack the mixture firmly into the baking dish.
Bake at 350°F (175°C) for 40–45 minutes until browned and the internal temperature reads 160°F (70°C). Let cool to room temperature and refrigerate for 1–2 hours.
Once chilled, cut the meat into 3 crosswise pieces and slice each into 1/8-inch thick slices as needed.
In a skillet, heat olive oil over medium-high heat. Cook gyro slices until browned, about 2 minutes per side.
