INGREDIENTS
Sauce Ingredients
- 💧 ½ cup water
- 🍬 ¼ cup white sugar
- 🍶 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons ketchup
- 🍋 1 tablespoon lemon juice
- ⅛ teaspoon sesame oil
Mustard and Stir-fry Sauce
- 1 tablespoon dry mustard
- 💧 2 teaspoons water, divided
- 🍶 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- ½ teaspoon rice vinegar
Wrap Filling
- 3 tablespoons peanut oil, divided
- 1 pound ground pork
- 1 cup minced water chestnuts
- 🍄 8 ounces chopped fresh mushrooms
- 3 tablespoons chopped green onion
- 1 teaspoon minced garlic
Lettuce Wraps
- 1 head iceberg lettuce
- 1 teaspoon red chile paste, or more to taste
STEPS
Combine ½ cup water and white sugar in a microwave-safe bowl. Warm in microwave for 30 seconds. Add soy sauce, rice vinegar, ketchup, lemon juice, and sesame oil. Mix well and refrigerate for 30 minutes.
Mix dry mustard with drops of water to form a hot mustard consistency. Set aside.
Whisk soy sauce, brown sugar, and rice vinegar in a bowl to make stir-fry sauce.
Heat peanut oil in wok over high heat. Brown pork for 5 minutes. Add remaining oil, chestnuts, mushrooms, green onion, and garlic. Saute for 2 minutes.
Pour stir-fry sauce into wok and stir to coat pork mixture evenly. Cook for 4 minutes.
Prepare iceberg lettuce by removing stem, washing, peeling whole leaves, and slicing halves. Arrange leaves on a plate.
Serve pork filling in lettuce halves and pair with dipping sauce, mixed with mustard and chile paste.
