INGREDIENTS
Dry Ingredients
- 2 ½ cups all-purpose flour
- 2 tablespoons white sugar
- 2 teaspoons baking powder
- 🧂 ½ teaspoon salt
Wet Ingredients
- 1 ½ teaspoons active dry yeast
- 💧 ¾ cup warm water (100 degrees F)
- 3 tablespoons canola oil, divided
STEPS
Stir together yeast and warm water in a small bowl; let stand for 5 to 10 minutes. Whisk in 2 tablespoons of oil.
Pulse flour, sugar, baking powder, and salt in a food processor to combine. With machine running, pour yeast mixture through the feed tube. Process until a dough ball forms.
Turn the dough onto an unfloured counter to form a neat ball. If the dough is stiff, knead slightly with wet hands. Transfer to an oiled bowl, cover with plastic wrap, and let rise for approximately 45 minutes.
Prepare 24 squares of parchment paper (3-inch each). Keep the remaining tablespoon of oil in a small bowl.
Roll half the dough into a rope (1 ½ inches thick, 14 inches long) and cut into 12 equal pieces. Repeat with the other half. Roll each piece into a thin oval, brush with oil, and fold to form buns.
Place buns on parchment squares, arrange on a steamer tray, leaving 3/4 inch of space between them. Cover loosely and let rise for another 20 to 30 minutes.
Bring a steamer pan or pot filled halfway with water to a rolling boil over high heat. Steam buns (2 trays at a time) for about 8 minutes until puffy and dry-looking.
