INGREDIENTS
Meats
- 🥓 5 thick slices bacon, diced
- 1 cup beef stew meat, cut into 1 1/2 inch pieces
- 1 pound lamb stew meat, cut into 1 1/2 inch pieces
- 1 pound pork stew meat, cut into 1 1/2 inch pieces
Fats and Oils
- 2 tablespoons unsalted butter
Vegetables
- 🧅 2 onions, chopped
- 1 bulb garlic, peeled and minced
- 2 red bell peppers, chopped
- 🥔 3 potatoes, peeled and cubed
- 1 parsnip, chopped
- 3 stalks celery, chopped
- 🥕 4 carrots, chopped
- 1/2 medium head cabbage, chopped
- 1 cup green peas
Seasonings & Spices
- 1 cup all-purpose flour
- 1 teaspoon caraway seeds
- 3 tablespoons Hungarian sweet paprika
- 1 ½ teaspoons red pepper flakes
- 1/2 tablespoon salt
Liquids & Stock
- 1 cup red wine vinegar
- 🍅 1 (14.5 ounce) can peeled and diced tomatoes
- 5 cups beef stock
- 🍺 1 (12 fluid ounce) can or bottle beer
- 💧 3 cups water
Other
- 1 cup dry bread crumbs
STEPS
Fry the diced bacon in a large skillet for 5-10 minutes until browned. Remove the bacon with a slotted spoon and set aside. Saute the beef, lamb, and pork stew meat in batches using the bacon fat until browned. Remove with a slotted spoon and set the meat aside.
Melt butter in the remaining fat in the skillet. Saute onions and garlic for 5 minutes. Stir in the flour, caraway seeds, paprika, and red pepper flakes. Stir for 2 minutes to combine. Whisk in the vinegar and tomato, cooking until the mixture thickens.
Add the beef stock, beer, salt, water, red bell peppers, cooked bacon, and cooked meat. Bring to a boil, then reduce the heat, cover, and simmer for 45 minutes.
Stir in the potatoes, parsnip, celery, and carrots. Cover and simmer for another 30 minutes, or until the vegetables are tender.
Mix in the breadcrumbs to thicken the stew. Add the chopped cabbage and peas, simmering for 5 minutes. Allow the stew to cool slightly and refrigerate for enhanced flavor, if desired.
