INGREDIENTS

- 🫒 2 tablespoons olive oil
- 🍗 8 ounces boneless, skinless chicken breast
- 🧅 1 medium onion
- 🧄 2 cloves garlic
- 🌽 1 3/4 cups canned yellow corn
- 🍎 2 red apples, such as Braeburn, Empire, or Fuji
- 1/2 tablespoon ground cumin
- 1/8 teaspoon cayenne pepper
- 🫘 1 can (15 oz) black beans
- 🌶️ 4 1/2 ounces canned diced green chiles
- 2 teaspoons chicken bouillon
- 💧 2 cups water
STEPS
In a stockpot, heat 1 tablespoon of olive oil; add chicken and brown for about 5 minutes. Remove chicken from pan.
Heat remaining olive oil in the same pot; add onions and garlic and sauté until soft.
Add corn and sauté until golden brown. Add apple, cumin, and cayenne pepper (if desired); cook for about 3-4 minutes. Let cool for about 5 minutes.
Set aside about 1 cup of the mixture. Purée the remainder in a food processor or blender, adding a portion of water as needed, and return to the pot.
Add browned chicken, black beans, chiles, bouillon, and water to the pot. Bring to a boil and simmer for about 15 minutes. Ensure chicken is cooked to 165°F.
To serve, ladle soup into bowls and top with the non-puréed portion of the apple-corn mixture.
