- 1 cup raisins

STEPS
Wash hands well with soap and warm water.
Pre-heat the oven to 350°F. Grease two 8x4x2 inch loaf pans.
Toast walnuts in an ungreased skillet pan on medium-low heat for 5-7 minutes until brown and nutty. Set aside to cool.
Mix applesauce, egg, sugar, oil, and vanilla in a large bowl.
In a smaller bowl, mix flour, baking soda, cinnamon, and nutmeg.
Pour the flour mixture into the applesauce mixture and combine.
Stir in raisins and cooled toasted walnuts.
Divide batter evenly into the greased pans. Bake for 45-55 minutes.
Remove cakes from the oven and cool for 10 minutes. Remove from pans to finish cooling.
Let cakes cool for a few hours before serving for best taste.
