INGREDIENTS
Protein
- 🍗 6 skinless, boneless chicken breasts
Broth and Sauces
- 1 (10.75 ounce) can low-sodium chicken broth
- 🍑 ¾ cup apricot preserves
- 🍶 1 tablespoon light soy sauce
Thickening Agents
- 1 tablespoon cornstarch
- 1 tablespoon water
STEPS
Spray a large skillet with nonstick cooking spray. Brown chicken in the heated skillet.
Add chicken broth, apricot preserves, and soy sauce. Simmer for 20 minutes or until the chicken is cooked through.
Remove the chicken from the skillet. Add 1 tablespoon of cornstarch mixed with 1 tablespoon of water to thicken the sauce. Return chicken to skillet and turn to coat thoroughly in the sauce.
