INGREDIENTS
Fruits
- â…“ cup dried apricots
Vegetables & Aromatics
- đź§… 1 onion, chopped
- đź§„ 2 cloves garlic, minced

- 3 tablespoons olive oil
Stock & Liquids
- 5 cups chicken stock
Legumes
- 1 ½ cups red lentils
Spices & Seasonings
- ½ teaspoon ground cumin
- ½ teaspoon dried thyme

- 🍋 2 tablespoons fresh lemon juice
STEPS
Sauté apricots, onion, and garlic in olive oil for 5 minutes.
Add chicken stock and lentils, then bring to a boil. Reduce heat and simmer for 30 minutes.
Stir in ground cumin, dried thyme, salt, and pepper. Simmer for another 10 minutes.
Stir in fresh lemon juice and purée half of the soup in a blender before returning it to the pot.
Serve warm.
