INGREDIENTS
Gelatin Mixture
- 1 (6 ounce) package apricot flavored Jell-O® mix
- 🧂 ⅔ cup white sugar
- 💧 ⅔ cup water
- 2 (4 ounce) jars apricot baby food
- 🍍 1 (20 ounce) can crushed pineapple with juice
Cream Mixture
- 1 (8 ounce) package cream cheese, softened
- 1 (14 ounce) can sweetened condensed milk
Topping
- 🌰 ⅓ cup chopped pecans
- 1 (8 ounce) container frozen whipped topping, thawed
STEPS
In a small saucepan, combine the gelatin mix, sugar, and water. Bring to a boil and mix until dissolved. Remove from heat, then add baby food and crushed pineapple with juice. Stir the mixture and let it cool for 10 minutes.
In a separate bowl, combine the cream cheese and sweetened condensed milk. Mix until smooth, then whisk this mixture into the fruit and gelatin mixture.
Stir in the chopped pecans and pour the mixture into a 9x13 inch pan. Refrigerate until fully chilled.
Before serving, spread the thawed whipped topping over the salad and sprinkle with additional chopped pecans if desired. Cut into squares to serve.
