INGREDIENTS
Seafood
- š 200g clams (purged)
Vegetables
- 50g nanohana (rapeseed greens)
Seasoning
- 3cm dried kombu
- 1 tsp soy sauce
- š§ Pinch of salt
- 1 tbsp sake
Liquid
- š§ 400cc water
STEPS
Trim the base of nanohana and cut kombu into thirds using kitchen scissors.
Boil water in a pot, add nanohana, and blanch for 30 seconds to 1 minute. Cool in water and squeeze out excess moisture. Cut in half.
Scrub clams by rubbing their shells together under running water.
Place kombu and water in a pot and let it sit for 15 minutes. Add clams and heat over medium. Remove kombu just before boiling and reduce to low heat. Skim off foam.
Add sake, salt, and soy sauce to the pot and adjust seasoning to taste.
Serve the soup in bowls, placing nanohana on top.
