INGREDIENTS
Slaw
- 14 ounces coleslaw mix
- 1/4 cup cilantro leaves, chopped
- 1/4 cup rice vinegar
- 1 1/2 tablespoons sesame oil
- 1 tablespoon Sriracha, or more to taste
- 1 1/2 teaspoons soy sauce
- 1 teaspoon sesame seeds
Pork & Mushroom Sauce
- 💧 1 cup water
- 1/4 cup hoisin sauce
- 1 tablespoon Sriracha, or more to taste
- 1 tablespoon fish sauce (optional)
- 2 teaspoons sesame oil
- 1 pound ground pork
- 1 1/4 teaspoons kosher salt, divided, or to taste
Vegetable Base
- 1 teaspoon olive oil
- 1 pound crimini mushrooms
- 2 tablespoons ginger paste
Bun Topping
- 3 tablespoons mayonnaise
- 1 tablespoon sesame oil
- 1/4 cup cilantro leaves
STEPS
Add coleslaw mix, green onions, and cilantro to a bowl. Whisk rice vinegar, sesame oil, Sriracha, soy sauce, and sesame seeds together. Toss dressing with slaw; marinate for at least 30 minutes.
Whisk water, hoisin sauce, Sriracha, fish sauce, and sesame oil in a bowl; set aside.
Brown ground pork with kosher salt in a skillet, breaking it up and rendering fat, 8–10 minutes. Transfer pork to the sauce bowl.
Pulse mushrooms in a food processor to pea-sized pieces. Sauté mushrooms in olive oil with a pinch of salt until golden, 8–10 minutes.
In the skillet, cook onion mixture made in food processor (onions, bell peppers, jalapeño) in olive oil until translucent, 5–7 minutes.
Add processed garlic and ginger paste to skillet; sauté until fragrant. Combine with pork, mushrooms, and sauce mixture. Simmer for 10–12 minutes.
Mix mayonnaise and sesame oil. Spread on buns and toast in a pan until golden, about 2 minutes.
Assemble buns: layer Sloppy Joe mix, slaw, cilantro, and more Sriracha. Top with the other bun half.
