INGREDIENTS
Vegetables
- 🌱 6 spears asparagus (120g)
- 🍄 1/2 pack enoki mushrooms (100g)
- đź§… 1/2 tbsp chopped green onion
Liquids
- đź’§ 400 ml water
Seasonings
- 1/2 tsp chicken stock powder
- đź§‚ 1/3 tsp salt
- Pinch of pepper
- Dash of chili oil
STEPS
Peel the bottom half of the asparagus spears and cut them diagonally into 2 cm pieces. Trim the root of the enoki mushrooms, cut them in half, and separate them by hand.
Heat water in a pot over medium heat. Once boiling, add chicken stock powder, asparagus, and enoki mushrooms. Reduce to low heat and simmer for about 3 minutes until the asparagus softens. Adjust the taste with salt and pepper.
Serve in a bowl, drizzle with chili oil, and sprinkle chopped green onion on top.
