INGREDIENTS
Protein
- 2 large skinless, boneless chicken breast halves
Vegetables
- 🌱 8 asparagus spears
Dairy
- 🧀 ½ cup shredded mozzarella cheese
Condiments
- 1 to 2 tablespoons mayonnaise for brushing (Optional)
Seasoning
- ¼ cup Italian-seasoned bread crumbs
- 🧂 Salt to taste
- Black pepper to taste
STEPS
Preheat the oven to 375°F (190°C) and grease an 8-inch square baking dish.
Place each chicken breast between two sheets of heavy plastic and pound evenly with a meat mallet to about 1/4 inch thickness. Sprinkle with salt and pepper.
Place 4 asparagus spears and shredded mozzarella in the center of each chicken breast. Roll chicken breasts tightly around the fillings.
Transfer chicken rolls seam-side down into the prepared baking dish. Brush with mayonnaise if desired and sprinkle bread crumbs on top.
Bake chicken in the oven for 25 minutes or until the internal temperature reaches 165°F (74°C).
