INGREDIENTS

- 🌱 1 pound asparagus

- 1 cup full-fat ricotta cheese
- 🧀 1/4 cup Asiago cheese

- 1 1/2 tablespoons Italian seasoning
- 🧂 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Pastry
- 1 sheet puff pastry

- 1 tablespoon olive oil
STEPS
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Bring a large pot of water to a boil over high heat. Reduce heat to medium and add asparagus. Cook until slightly softened, 2 to 3 minutes. Remove asparagus from the pot and immediately dunk them in cold water. Drain and blot asparagus dry with a paper towel.
Crack egg into a small bowl and beat lightly. Reserve 1 tablespoon for egg wash. Mix ricotta, Asiago cheese, Italian seasoning, salt, and pepper into the remaining beaten egg until thoroughly combined.
Roll puff pastry into a large rectangle (about 10x15 inches) on a floured surface. Transfer to the prepared baking sheet.
Brush a 1-inch border around the edges of pastry with reserved egg wash.
Add the ricotta mixture to the center of the puff pastry, spreading evenly while leaving a 1-inch border. Arrange asparagus on top. Drizzle asparagus with olive oil and season with additional salt and pepper, if desired.
Bake in the preheated oven until the puff pastry is puffed and golden at the edges, about 25-30 minutes. Cool slightly before serving.
