INGREDIENTS

- 4 cups grated fresh green papaya
- π§ 1/4 cup salt
- π₯ 1 carrot, peeled and sliced
- 1 red bell pepper, sliced into long strips
- 2 green chile peppers, sliced into thin rings
- 1 (2 inch) piece fresh ginger root, peeled and sliced
- π 1 (1.5 ounce) box raisins
- 1 cup white vinegar
- π§ 1 cup water
- π 1 cup white sugar
- π§ 1 tsp salt
STEPS
Toss grated papaya with 1/4 cup salt in a large bowl and let sit for 1 hour. Drain liquid, rinse thoroughly, and squeeze out excess water using cheesecloth.
Combine papaya, carrot, bell pepper, chile peppers, ginger, and raisins. Mix well and transfer to clean jars.
In a saucepan, bring vinegar, water, sugar, and 1 tsp salt to a boil for 5 minutes. Pour over the vegetable mixture in jars, ensuring they are submerged.
Let the mixture marinate in the refrigerator for at least 24 hours before using.
