INGREDIENTS
Fish
- 🐟 100g sashimi-grade salmon
Vegetables
- 🥑 1 avocado, peeled and diced
- 🍅 6 cherry tomatoes, halved
- 1 pack broccoli sprouts
Fruits
- 🍋 1/2 lemon, juiced and zested
Seasonings
- 🧂 1/3 tsp salt
- 1 tsp whole-grain mustard
- 2 tbsp olive oil
STEPS
Juice the lemon and remove seeds. Zest the lemon peel.
Cut the salmon into 1cm cubes.
Halve the avocado, remove the pit, peel, and dice into 1cm cubes. Halve the cherry tomatoes. Trim the roots off the broccoli sprouts.
In a bowl, mix the seasonings (salt, mustard, olive oil) with the lemon juice. Add salmon, avocado, and tomatoes, and toss gently.
Plate the broccoli sprouts, top with the mixed salad, and sprinkle lemon zest on top.
