INGREDIENTS
Main Ingredients

Seasonings

- 4 tbsp soy sauce
STEPS
Thinly slice the onions and beat the eggs. Prepare the green onion or scallion by chopping it finely.
Mix the seasonings (water, sugar, mirin, soy sauce) in a bowl.
Heat a frying pan over low heat and add the sliced onions and mixed seasonings.
Simmer the onions until they soften and absorb the seasoning.
Pour the beaten eggs over the onions and cook until slightly set but still soft.
Add the chopped green onion or scallion and stir gently.
Serve the onion and egg mixture over bowls of cooked rice.
