- 🌭 1 pound smoked pork sausage, cut into 2-inch pieces
Roux
- 1 cup all-purpose flour
- ¼ cup vegetable oil

Vegetables
- 🧅 1 large onion, diced
- 1 cup diced celery
- 1 cup diced green bell pepper
- 🍅 1 cup diced tomatoes
- 1 cup frozen sliced okra, thawed
- 🌱 4 green onions, chopped
Seasoning
- 🧂 kosher salt to taste
- 🧂 2 teaspoons kosher salt
- 1 teaspoon ground black pepper
- ½ teaspoon dried thyme
- ¼ teaspoon cayenne pepper, or to taste
- 1 large bay leaf
Liquid
- 🥣 6 cups chicken broth
STEPS
Preheat the oven to 400 degrees F (200 degrees C).
Stir flour, oil, and melted butter together to form a paste. Transfer roux to a large roasting pan, spread into a rough rectangle about 1/2-inch thick, leaving room around the outside for chicken and sausage.
Place chicken thighs, skin-side down, and sausage around the roux in the pan. Season chicken generously with salt.
Bake in the preheated oven for 40 minutes.
Remove from oven, scatter onion, celery, and bell pepper over chicken, sausage, and roux. Stir roux briefly, then spread back out. Continue baking for 20 minutes.
Remove from oven. Transfer chicken and sausage to a plate. Stir vegetables and roux together, spread into an even layer, and bake until browned as desired, about 20 minutes.
Prepare cooking liquid: Mix chicken broth, salt, pepper, thyme, cayenne, and bay leaf. Refrigerate until needed.
Pour cooking liquid into the pan, whisk to combine. Stir in tomatoes and okra, then add sausage and chicken, skin-side up. Bake, stirring occasionally, until liquid is thickened, chicken is tender, 30-40 minutes.
Taste and adjust seasonings. Garnish with chopped green onions before serving.
