INGREDIENTS
Coating
- 🧀 1/3 cup grated parmesan cheese, non-fat
- 🌾 1/3 tablespoon all-purpose flour
- 🌿 1 teaspoon thyme sprigs, leaves removed and crushed
Fish
- 🐟 4 (6 ounces each) tilapia fish fillets
Topping
- 🧅 1 medium onion, chopped
- 🍄 1 cup halved mushroom caps
- 🧅 1/2 cup green onions (scallions), finely sliced
- 🧄 1 clove garlic, crushed
STEPS
Wash hands with soap and water.
Preheat oven to 350 °F (175 °C). Place parmesan cheese, flour, and thyme in a paper bag.
Individually coat fish fillets by gently shaking in the paper bag. Discard remaining coating ingredients.
Place fillets on a baking rack in a pan and bake for 20 minutes or until the fish flakes easily with a fork.
While the fish is baking, heat a skillet over medium-high heat. Add onion, mushrooms, green onions, and garlic. Cook, stirring frequently, until onions are softened. Season with ground black pepper as desired.
Serve the baked fish topped with the sautéed mushroom mixture.
