INGREDIENTS
Broth and Base
- 🍲 3 1/2 cups chicken broth
- 3/4 cup polenta
- 🧂 1/2 teaspoon salt
Cheese and Dairy
- 🧀 1/4 cup grated Parmesan cheese
- 🧀 3/4 cup shredded mozzarella, divided
- 🧈 1 1/2 teaspoons butter
Sauce and Toppings
- 8 ounces marinara sauce
- 2 slices prosciutto, shredded
STEPS
Preheat the oven to 425°F (220°C). Lightly oil a 9x13-inch baking dish; set aside.
Bring chicken broth to a boil in a saucepan, and whisk in polenta and salt. Cook the polenta, stirring continuously, until most of the liquid is absorbed, about 15 minutes.
Stir in Parmesan cheese, 1/4 cup mozzarella, and butter into the thickened polenta. Pour into the prepared baking dish and smooth the top.
Bake in the preheated oven until polenta is fairly firm, about 40 minutes.
Remove polenta from the oven and let stand for 5 minutes. Spread marinara sauce over the top and sprinkle with the remaining 1/2 cup mozzarella and shredded prosciutto.
Bake again until cheese is bubbling and golden brown, about 15 minutes. Let stand 5-10 minutes before serving.
