INGREDIENTS
Polenta Base
- 💧 2 ¼ cups water
- 🥛 1 cup milk
- 🧈 1 tablespoon unsalted butter
- 1 cup quick-cooking polenta
- 🧀 1 cup grated Parmesan cheese
- 🧈 1 tablespoon unsalted butter, chilled and cut into pieces
Toppings
- 🍅 Fresh tomato slices
- 🧀 ½ cup grated Parmesan cheese
- ½ cup fresh basil, chopped
STEPS
Preheat the oven to 450°F (230°C) and grease an 8x8-inch baking dish.
Heat water, milk, and 1 tablespoon of butter in a saucepan over medium-high heat; bring to a boil. Stir in polenta until thickened, about 5 minutes.
Remove from heat. Stir in 1 cup of Parmesan cheese and ½ chopped basil. Season with salt and pepper.
Transfer the polenta mixture to the prepared baking dish, then arrange chilled butter pieces on top.
Bake in the oven until bubbly and golden brown, about 15 to 20 minutes.
Arrange tomato slices decoratively on top of the baked polenta and sprinkle with remaining basil and Parmesan cheese.
Return to the oven and bake until the tomatoes are warm and the Parmesan is melted and bubbly, about 5 to 10 minutes.
