INGREDIENTS
Meat
- 🐄 1/2 lb ground sirloin
- 🌭 1 lb spicy Italian sausage
Vegetables
- 🧅 1/4 cup finely chopped onion
Spices
- 🧂 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon garlic powder
Dairy
- 🧀 1/2 cup shredded Cheddar and Monterey Jack cheese
- 1 (8-ounce package) garlic and herb cream cheese
Bacon
- 🥓 24 slices of bacon
Sauce
- 1 ½ cups BBQ sauce
STEPS
Bring a large pot of water to a boil. Add pasta shells and cook for 5 minutes. Drain and rinse with cold water. Spread shells out on a paper towel-lined baking sheet to drain.
Preheat the oven to 325 degrees F (160 degrees C).
Combine ground sirloin, Italian sausage, onion, salt, pepper, garlic powder, shredded cheese, and cream cheese in a bowl. Mix well and transfer the mixture to a piping bag or resealable plastic bag. Cut off one corner to facilitate filling.
Fill each pasta shell evenly with the meat mixture and wrap each stuffed shell with a slice of bacon. Place the stuffed shells on a lightly greased rack inserted in a baking sheet. Brush each shell evenly with BBQ sauce.
Bake in the oven for 30 minutes. Flip each shell, brush more BBQ sauce, and bake for another 25–30 minutes until bacon is crispy and shells are golden brown.
Flip shells once more, brush with additional BBQ sauce if desired, and bake for an additional 5 minutes.
Remove from oven, sprinkle with jalapeño slices if desired, and let stand for 10 minutes before serving.
