Soak the washed rice in 400ml of water in a bowl for about 20 minutes.

Cut the bamboo shoot in half lengthwise, rinse off any white residue, and slice the tip into bite-sized pieces. Thinly slice the base horizontally.

In a clay pot, add the soaked rice, water, and seasonings (sake, soy sauce, and salt). Mix well and flatten the rice evenly. Spread the bamboo shoot slices on top.

Cover the pot and heat over medium heat until it starts to boil. Then reduce to low heat and cook for 12 minutes.

Turn off the heat and let the rice steam with the lid on for 15 minutes. Remove the lid and gently mix the rice.
