INGREDIENTS
Apple Topping
- π 3 apples
- π¬ 3 tablespoons sugar
- π§ 1/4 cup water
- 1 teaspoon cinnamon
Pancake Batter
- π₯ 2 eggs
- π₯ 1 1/2 cups low-fat or fat-free milk
- π― 1 tablespoon honey
- π’οΈ 3 tablespoons vegetable oil
- πΎ 3/4 cup whole wheat flour
- πΎ 3/4 cup flour
- 2 teaspoons baking powder
- π 2 bananas
STEPS
Wash hands with soap and water.
Wash apples, remove cores, and slice thinly with peel still on.
Combine apples with the sugar, cinnamon, and water.
Cook in skillet for 10 minutes. Set aside while making pancakes.
Beat eggs and mix in milk, honey, and oil.
Add flours and baking powder to the mixture.
Slice bananas and add to the pancake batter mixture.
Coat a non-stick frying pan or griddle with cooking spray. Heat over medium for 2 minutes.
Spoon 1/4 cup batter onto the griddle for each pancake. Cook until bubbly and dry around edges. Flip and cook for 2-3 minutes or until golden.
Repeat the process until all batter is used, applying cooking spray as needed.
Serve pancakes topped with the cooked apple mixture.
