INGREDIENTS
Chicken
- 🍗 1 1/2 pounds skinless, boneless chicken breasts and/or thighs
Dry Seasonings
- 2 tablespoons breadcrumbs
- 🧂 1 1/2 teaspoons kosher salt
- 1 teaspoon paprika
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
Flour Mixture
- 1 tablespoon vegetable oil
- 1/3 cup cornstarch
- 1/3 cup self-rising flour
For Frying
- 3 cups vegetable oil for frying, or as needed
Sauce
- 🥚 3/4 cup mayonnaise
- 🍯 2 tablespoons honey
- 3 tablespoons Sriracha hot sauce
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 3 tablespoons rice vinegar
- 1/2 teaspoon pepper
Garnish
- 🧅 1/3 cup green onions
STEPS
Cut chicken into about 1 to 1 1/2-inch pieces and blend with breadcrumbs, salt, paprika, black pepper, cayenne, garlic powder, and vegetable oil in a food processor until finely ground.
Scoop 2 tablespoon-sized portions onto a sheet pan; cover and chill for 30 minutes.
Mix self-rising flour and cornstarch in a bag. Shape nuggets and coat them in the flour mixture, shaking off excess flour.
Chill the formed nuggets in the refrigerator for 1-2 hours.
Mix mayonnaise, honey, Sriracha, soy sauce, sesame oil, rice vinegar, and pepper for the sauce.
Heat oil to 350°F (175°C) and deep-fry nuggets until golden brown and cooked through, approx. 4 minutes.
Mix fried nuggets with sauce and garnish with green onions.
Serve immediately with remaining sauce on the side.
