INGREDIENTS
Meat
- 800g pork belly block
Egg
- 🥚 4 boiled eggs
Vegetables
- 4 slices skin-on ginger
- đź§… 1 green onion (green part)
- đź§… 10cm white onion
Oil
- 1/2 tbsp salad oil
Broth
- 400cc boiling water
- 100cc sake
- 🍬 50g sugar
- 100cc soy sauce
- 4 slices skin-on ginger
STEPS
Cut the pork belly into pieces that fit in the pot.
Cut the white onion into thin strips and soak in water to make white-hair onion garnish.
Heat salad oil in a frying pan and sear the pork belly on all sides until browned.
Boil the pork belly with green onion, ginger, and water for 1 hour on low heat after bringing to a boil.
Separate the pork belly from the boiling water and cut into bite-sized pieces.
Simmer the pork belly with broth ingredients for 30 minutes on low heat with a drop lid.
Turn off the heat and add boiled eggs, letting them soak for 20 minutes.
Plate the pork belly and eggs, garnishing with white-hair onion.
