    • 2 tbsp mirin
    • 🍬 1/2 tbsp sugar
    • 2 tbsp soy sauce

Cut daikon into 3cm slices, peel thickly, and halve. Slice ginger into thin strips.

Cut buri fish into three equal pieces.

Place daikon in a pot, add enough water to cover, sprinkle rice, and heat over medium heat. Bring to a boil, cover, and simmer on low heat for 30 minutes until tender. Drain and rinse off rice residue.

In a pot, combine seasoning ingredients (water, sake, mirin, sugar, soy sauce) and half the ginger. Heat over medium heat until boiling, then add buri fish. Spoon broth over fish, cover, and simmer on low heat for 15 minutes. Remove fish.

Add daikon and dashi stock to the pot, heat over medium heat until boiling, then add soy sauce. Cover with a drop lid and simmer on low heat for 20 minutes.

Return buri fish to the pot, cover with a drop lid and simmer for another 10 minutes. Serve on a plate and garnish with remaining ginger.
