INGREDIENTS
Oil
- 2 teaspoons olive oil
Vegetables
- 4 cloves garlic, minced
- 1 large bell pepper, diced
Protein
- 🐄 1 pound ground beef
Beans
- 1 (15 ounce) can chili beans
Spices & Seasoning
- 1 teaspoon cumin
Sauces
- 1 (15 ounce) can enchilada sauce
Cheese
- 🧀 12 ounces Mexican blend shredded cheese
STEPS
Preheat the oven to 375 degrees F (190 degrees C).
Heat a large skillet over medium heat. Add olive oil, then add onions and sauté for 2 to 3 minutes. Add bell pepper; sauté 1 to 2 minutes. Add garlic and sauté until fragrant, about 1 minute.
Add ground beef; cook and break up with a spatula until browned and crumbly, about 10 minutes. Drain grease.
Stir in chili beans, salt, black pepper, and cumin. Add 1 cup enchilada sauce and simmer for 5 minutes on medium-low heat.
Spread remaining enchilada sauce evenly in a baking dish. Cut tortillas to fit the dish and create layers: tortilla, beef mixture, and cheese. Repeat for two layers, ending with cheese. Cover with foil.
Bake in preheated oven for 15 minutes. Remove foil and bake until cheese is browned, another 5 to 10 minutes.
Let baked enchilada rest for 5 to 10 minutes before serving.
