- 🥭 ⅛ cup chopped dried mango
- ⅛ cup chopped candied citron
Liquids
- ¼ cup dark rum
- 6 tablespoons dark rum (or more as needed)
- 🥛 2 tablespoons milk
- ¼ cup unsulfured molasses

- 🧈 ½ cup unsalted butter, softened
- ¼ cup packed brown sugar
- 🥚 1 large egg
- ½ cup all-purpose flour
- 🧂 ¼ teaspoon salt
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon baking soda

- ¼ cup chopped pecans
STEPS
Gather all ingredients.
Soak cranberries, currants, cherries, mango, and citron in ¼ cup rum; cover tightly at room temperature for 24 hours.
Preheat oven to 325°F (165°C). Prepare a 6-inch round pan with cooking spray and parchment paper.
Cream butter and sugar for 3 minutes until light; beat in the egg.
Mix flour, salt, cinnamon, and baking soda. Alternately add with molasses and milk into butter mixture; mix briefly after each addition.
Fold in soaked fruits and pecans. Transfer batter to the pan and smooth the top.
Bake for 40-45 minutes, or until a toothpick comes out clean.
Cool for 10 minutes in the pan; drizzle with 2 tablespoons rum.
Wrap the cake in cheesecloth moistened with 1 tablespoon rum, then parchment paper.
Seal in an airtight container and age at room temperature for at least 10 weeks before serving.
