STEPS
Whisk flour and salt together in a large bowl. Cut in chilled shortening with a pastry blender until the mixture resembles coarse, pea-sized crumbs.
Add 1/4 cup ice-cold water; use a fork to stir the flour up from the bottom, just until it's mixed in. Press down on chunks and continue adding water in 1-tablespoon increments, mixing until dough holds together when molded.
Gently gather dough into a ball, divide in half, flatten each into a 1-inch-thick disc, wrap in plastic wrap, and chill for at least 30 minutes or up to 2 days.
Roll dough on a lightly floured surface. Fit dough into a pie plate, patching crumbles or tears as needed.
