INGREDIENTS
Main
- 1 (14-ounce) New York strip steak
- 🧂 3/4 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
Cooking fats
- 1 teaspoon vegetable oil
- 1 teaspoon clarified butter
Sauce
- 2 tablespoons shallots
- 1/3 cup white wine
- 1/3 cup beef bone broth
- 2 tablespoons unsalted butter, cubed
STEPS
Trim excess fat and tough membrane from the steak. Season both sides with salt and pepper, then place on crinkled foil set on a plate. Refrigerate uncovered for at least 2 and up to 10 hours, turning occasionally.
Bring steak to room temperature 15 to 30 minutes before cooking.
Heat a heavy steel pan with oil and clarified butter over high heat until shimmering.
Sear steak on the first side for 2 minutes, then redistribute fat by rubbing the surface around the pan. Sear for 2 more minutes. Repeat on the second side for a total of 4 minutes per side or until steak reaches desired doneness.
Remove steak from pan, loosely cover with foil, and rest for 5 minutes.
For the sauce, add shallots to the hot pan and cook until softened and lightly colored, about 1 minute.
Turn heat to high, add wine, and cook until reduced by half, 1 to 2 minutes.
Add beef bone broth and reduce by three-quarters, 1 to 2 minutes.
Turn off heat, add butter cubes, and swirl pan until butter is incorporated and sauce is thick and glossy. Serve over rested steak.
