Cake
- 2 1/4 cups all-purpose flour
- 1 3/4 cups white sugar
- 1 cup cocoa
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon kosher salt
- 1 cup whole buttermilk
- 3/4 cup canola oil

- 1 tablespoon vanilla extract
- ☕ 1/2 cup brewed coffee
Filling
- 1 (3.9-ounce) package chocolate instant pudding and pie filling
- 2 1/2 cups heavy cream
Frosting
- 2 cups semisweet chocolate chips
- 🧈 3/4 cup unsalted butter, cut into pieces
- 1/2 cup heavy whipping cream
- 1 tablespoon vanilla extract
- 1/2 teaspoon kosher salt
STEPS
Preheat the oven to 350°F (180°C). Coat 3 (9-inch) round cake pans with cooking spray, line them with parchment paper, and spray lightly again. Set aside.
Whisk together flour, sugar, cocoa, baking powder, baking soda, and salt in a bowl until no lumps remain.
In a stand mixer bowl, combine buttermilk, canola oil, eggs, and vanilla. Beat on medium-low speed for 30 seconds. Gradually add dry ingredients and then mix in coffee until incorporated.
Divide the batter evenly between the prepared pans and bake for 18 minutes or until a toothpick comes out with moist crumbs. Let cool for 45 minutes.
Make the filling: Whisk pudding mix and heavy cream for 2 minutes until thickened. Chill for 30 minutes.
Prepare frosting: Melt chocolate chips, butter, and cream in a microwave-safe bowl in intervals until smooth. Chill for 25 minutes until spreadable.
Trim the top surface of cooled layers for even assembly, reserving trimmings to make fine crumbs for decoration.
Assemble the cake: Spread half the filling between the first and second layers of trimmed cakes, then add the third layer. Spread frosting over the top and sides.
Gently press cake crumbs evenly across the frosting to cover the surface entirely. Slice and serve.
