INGREDIENTS
Sauce
- 🧈 1 tablespoon butter
- 🧅 ½ cup minced white onion
- 🧄 3 cloves garlic, minced
- 1 tablespoon chopped fresh thyme
- ¾ cup low-sodium beef broth
- ½ cup port wine
Steak and topping
- 1 tablespoon vegetable oil
- 4 filet mignon steaks (1 1/2 inch thick)
- ¾ cup crumbled blue cheese
- ¼ cup panko bread crumbs
STEPS
Melt butter in a skillet over medium heat. Add the onion, garlic, and thyme. Cook, stirring constantly, until onion is tender. Stir in the beef broth and port wine, then bring to a boil and reduce to about 1/2 cup. Set aside. You can make this ahead of time and reheat.
Preheat the oven to 350°F (175°C). Heat vegetable oil in an oven-safe skillet over high heat and sear steaks quickly on both sides until browned. Transfer the skillet to the oven.
Roast steaks in the oven for about 15 minutes for medium rare, achieving an internal temperature of 145°F (63°C). Adjust time if needed for desired doneness. Remove steaks from the oven and place them on a baking sheet.
Mix panko bread crumbs with crumbled blue cheese and top each steak with this mixture.
Set the oven to broil and place the steaks under the broiler until the cheese topping is browned and bubbly, approximately 3–4 minutes. Remove and let steaks rest for 15 minutes before serving with warm port wine sauce.
