INGREDIENTS
Crust
- 1 ½ cups all-purpose flour
- ½ cup almond flour
- 🧂 ⅛ teaspoon salt
- ½ cup white sugar
- 🧈 4 tablespoons unsalted butter, at room temperature
- 4 tablespoons butter-flavored shortening
- ¼ teaspoon almond extract
Filling
- 2 cups white sugar
- 1 cup all-purpose flour, sifted
- 🍋 1 cup freshly squeezed lemon juice
- ¼ cup honey
- 🥚 6 large eggs - at room temperature, separated, divided
- 🍋 2 ½ tablespoons lemon zest, or to taste
- ¼ teaspoon baking soda
- 1 ½ cups fresh blueberries, or to taste
Meringue Topping
- 🥚 2 large egg whites
- ½ cup white sugar
- ¼ teaspoon cream of tartar
- 🧂 ⅛ teaspoon fine salt
STEPS
Combine flour, almond flour, and salt for crust in a bowl.
Combine sugar, butter, shortening, and almond extract; beat until light and fluffy. Add dry ingredients on low speed until just mixed.
Press dough into a 9x13-inch baking dish, creating a 1/2-inch edge. Chill for 30 minutes.
Preheat the oven to 350°F (175°C) and bake the crust until golden, 45 to 60 minutes. Cool completely for 30 minutes.
Prepare filling: combine sugar, flour, lemon juice, honey, egg yolks, 4 egg whites, lemon zest, and baking soda. Mix gently.
Spread blueberries over cooled crust and pour filling over the top.
Bake at 300°F (150°C) until filling sets, about 40 to 50 minutes. Cool for 30 minutes.
Set oven to broil. Prepare meringue: whisk egg whites, sugar, cream of tartar, and salt over simmering water until sugar dissolves.
Beat meringue until stiff peaks form. Spread over cooled bars.
Broil meringue until golden brown, 30 to 60 seconds. Chill bars for 3 hours before serving.
