INGREDIENTS
Main Ingredients
- 80g blueberries
- 1 piece castella cake
- 🥛 100g whipping cream
- đź§‚ 3 tbsp sugar
STEPS
Place 60g of blueberries and 3 tbsp of sugar in a saucepan. Mash and simmer for about 10 minutes until it becomes a puree.
While the puree cools, cut the castella cake into a round shape to fit your serving cup. Use the rim of the cup to make cutting easier.
Mix the cooled blueberry puree with 100g of whipping cream to create the mousse.
Transfer the mousse into a piping bag and layer it in the cup, creating 2–3 layers. Use a wine glass for an elegant presentation.
Place a layer of castella cake on top of the mousse.
Pipe the remaining mousse on top and decorate with the remaining blueberries.
