INGREDIENTS
Main Ingredients
- 1 cup blueberries
- 1 ½ cups all-purpose flour, divided
- ½ cup white sugar
- 🛢 ¼ cup vegetable oil
- 🥛 ½ cup milk
- 🥚 1 egg
- 1 teaspoon vanilla extract
- 3 teaspoons baking powder
- 🧂 ½ teaspoon salt
- ½ cup brown sugar
- ⅓ cup all-purpose flour
- 🌰 2 teaspoons cinnamon
- 🧈 ¼ cup butter
- cooking spray
STEPS
Preheat the oven to 400°F (200°C). Spray an 8x8-inch baking pan with cooking spray.
Toss blueberries with ½ cup of flour in a small bowl until coated, then set aside.
Beat sugar and oil together in a large bowl using an electric mixer. Add milk, egg, and vanilla extract. In a separate bowl, mix remaining 1 cup flour, baking powder, and salt. Combine the flour mixture with the sugar mixture, and fold in the blueberry mixture. Pour the batter into the prepared baking pan.
In another bowl, mix brown sugar, ⅓ cup flour, and cinnamon. Cut in butter until the mixture is crumbly. Sprinkle the topping onto the batter.
Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes. Let the cake cool before serving.

💡 For an extra burst of flavor, use fresh lemon zest in the batter.Allow the cake to cool completely before slicing to prevent it from crumbling.Frozen blueberries can be used if fresh ones are unavailable; coat them with flour similarly to avoid color bleeding.
