INGREDIENTS
Dry Ingredients
- 1 cup whole oats
- 1 cup oat flour
- ½ cup brown sugar
- 🧂 ½ teaspoon salt
- ½ teaspoon baking soda
Wet Ingredients
- 🥛 ½ cup almond milk
- 🥚 2 eggs
- 🧈 ¼ cup melted butter
- 1 teaspoon vanilla extract
Add-ins
- 1 cup fresh blueberries
- ½ cup chopped walnuts
- ⅓ cup shredded coconut (optional)
STEPS
Preheat the oven to 350°F (175°C). Grease an 8-inch square pan.
Combine whole oats, oat flour, brown sugar, salt, and baking soda in a bowl.
Stir in almond milk, eggs, melted butter, and vanilla extract until well combined.
Fold in the blueberries and chopped walnuts. Spread the mixture into the prepared pan and optionally top with shredded coconut.
Bake in the preheated oven until edges are golden and coconut is browned, about 35 minutes. Cool in the pan for 10 minutes before cutting into squares.
