INGREDIENTS
Meat
- 🐖 300g pork belly block
Vegetables
- 🧅 1 green onion (green part)
- 2 slices of ginger
- 🥬 100g kimchi
- Perilla leaves as needed
- 🥬 Lettuce as needed
Sauce
- 1 tbsp miso
- 🍬 1 tsp sugar
- 1 tsp gochujang
- 1 tsp sesame oil
STEPS
Place pork belly, green onion, and ginger in a pot. Add enough water to cover the pork. Heat until boiling, skim off scum, then simmer on medium-low heat for 30 minutes. Turn off the heat, let cool, and cut into bite-sized pieces.
Cut the kimchi into bite-sized pieces.
Mix all sauce ingredients in a bowl to make the miso sauce.
Wrap pork, perilla leaves, and kimchi in lettuce, and dip in miso sauce before eating.
