INGREDIENTS
Dry Rub
- 2 tablespoons brown sugar
- 🧂 1 tablespoon sea salt
- 1 tablespoon freshly cracked black pepper
- ¾ teaspoon garlic powder
- ¾ teaspoon onion powder
- ½ teaspoon ground coriander
- ½ teaspoon dry mustard
- ¼ teaspoon cayenne pepper
Ribs and Marinade
- 1 rack baby back pork ribs, outer membrane removed
- 4 ounces apple juice
Bourbon BBQ Sauce
- ½ cup ketchup
- ¼ cup bourbon whiskey
- 2 tablespoons apple cider vinegar
- 1½ tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon molasses
- 1½ teaspoons Dijon mustard
- 1½ teaspoons soy sauce
- 1 teaspoon onion powder
- 1 teaspoon freshly cracked black pepper
- 🧄 1 clove garlic, finely minced
- 🧂 1 pinch sea salt
STEPS
Combine all dry rub ingredients in a small bowl; set aside.
Place rib rack on aluminum foil, meat side up. Evenly coat ribs with dry rub, pressing it in.
Pour apple juice around rib rack and wrap tightly with additional aluminum foil. Marinade ribs in refrigerator for 2 hours.
Preheat oven to 225°F (110°C). Cook wrapped ribs in oven for 4 hours until fork-tender but not falling apart. Unwrap ribs.
Prepare bourbon BBQ sauce by combining ketchup, bourbon, cider vinegar, Worcestershire sauce, Dijon mustard, molasses, soy sauce, onion powder, minced garlic, and sea salt in a saucepan. Simmer until reduced by ⅓.
Preheat outdoor grill to high heat; cover grate with aluminum foil.
Glaze ribs with sauce and cook on grill, brushing sauce in layers every 5 minutes until slight caramelization occurs.
Cut ribs into individual pieces and serve with leftover sauce.
